My Energy Secret

Yum! There is just something about Chocolate and Peanut Butter! Its delicious, savory, sweet, and salty. Thats exactly what I had for lunch today- in the form of a PURE protein bar.







Life gets hectic and sometimes I don't have energy or time to think about lunch, but finding these bars was the answer to my lunch dilema. At only 180-200 calories and 20g of protein, these bars get me through the lunch hump and give me plenty of energy til my 4pm midday snack prior to my gym workout around 5:30pm.

Every morning my lunch takes 2 seconds to pack- time well saved to use towards getting ready, eating a balanced breakfast, and do a little reading before work. These bars have allowed me to have more time management in the morning.

I don't get paid to advertise, but they are delicious! And perfectly enjoyed with....
This! A Grande Zen Green Tea Misto with Soy. $2.28 drink + $1.25 bar = $3.53 lunch :-)

A much needed run...

Bryan and I just got back from our St Augustine/Orlando weekend and it was wonderful!


Everything about the trip was perfect- leaving Sat. morning - staying at the cutest Little bed and breakfast in St Augustine and driving to Orlando for a Father's Day dinner with my parents on Sunday. It was perfect. I'll post pics from the trip soon.

Then it all started...... I got back from vacation to find a strange smell all throughout my condo. With further investigation, I noticed the smell coming from my roommates bedroom. There was a water stain on the carpet and mold was developing!


I was exhausted from traveling all day and all I wanted was a powernap and a run, but things had to be taken care of first. My roommate made a series of calls, I wrote the landlord a long email, and we finally got a maintenance guy to come tomorrow morning- but in the midst of it all I noticed a recession hole in our kitchen where bugs were entering! I wrote another email to the landlord and hopefully we can get things cleared up soon!



I was exhausted! So I crashed into my sheets and was out cold for 40min. When I awoke I had a burst of energy and through on my running gear for a gym workout. It was 90 degrees out this afternoon and I was anticipating a HOT evening as well.



The second I stepped outside I smiled. It was GORGEOUS out. Overshadowed, PERFECT Temp in the mid 80s, a light breeze, and glossy cloud speckled skies. I was not going to miss this opportunity to jog outside.

As I ran I felt stronger with each step. I haven't felt that way in so long and it was so nice to get back into the groove of running again! There were a dozen or so other runners out tonight as well and I felt an instant connection with them- they too could not miss such a gorgeous opportunity to run tonight.

I realize that I feel so fulfilled when I run, I was missing that for a while. I am so thankful to God that I am able to run and will never take it for granted!

What a perfect end to a perfect weekend! Time for Bachlorette tonight! Yay!

Tailgating, Baseball, and Rap

An odd combo you may think ... but that is just how it unfolded. We got a bunch of people together for the Marlins game and with a pitstop at Costco were on our way to a crazy evening in Miami.




With all the fruit on sale, even at COSTCO!, we got enough strawberries to feed an army and a HUGE watermelon for $10 total! We also went crazy with the Chicken, Hamburgers, Hotdogs, 7layer dip, veggies, pita chips and hummas, cookies, brownies etc. Yum!


Rain or shine we were going to stick it out til the Ludacris concert after the Marlins game. Secretly I think that is why most people came haha. I mean go Marlins and everything- but they lost anyways.




I am a fair-weather fan, its true- but I do love baseball sporting events!


Thank God for SUV fold-up trunks (aka "umbrellas") ...

Question: whats your favorite sporting event to go to?




I like baseball, basketball, polo, and football. To me its more about the experience and friends then the actual game- though I definitely root on my team! :-)

Mango Coconut Banana Cream Supreme Pie


I was creative the other day and decided to make up a recipe with Mango. Probably because mangoes are EVERYWHERE! I can't get away from these delicious, sweet, juicy, tropical fruits and neither would I want to! The other day I was at the gas station and there was a truck selling them 3 for a dollar- how can anyone pass THAT up?!?

Anyways, what do you do with TONS of mangoes, shredded coconut, bananas, and flour? Make a pie of course!

I call it my "Mango Coconut Banana Cream Supreme Pie"

Mango Coconut Banana Cream Supreme Pie
Crust:
1/2 c flour
7 oz toasted coconut
2 egg whites
Bake in 9' pie pan for about 11min at 350F


Pie:
half can sweetened condensed milk
2 cups mango (pureed in processor)
1/2 mashed banana
2tsp coconut extract
2 egg whites
beat together, pour into the crust, bake at 350F for 15 min, add shredded coconut and bake additional 5 min til toasted.
then refrigerate for 2-3 hours
Top with whipped cream if desired!
