Mahi Mahi Tacos!

Yesterday was a great day at work!


Why? Because I got up early and ran in the morning!

I always refuel with quality food! And when pressed for time- quality packaged cereal bars ;-)

After a long work day I wanted to do something special for Bryan and invited him over for dinner. I love to cook, but rarely cook for just me.

The menu was inspired by this season's vegetables:




Roasted Sweet Potatoes (Farmers Market Price: 89cents)




Corn on the Cob (Farmer's Market Price: 4 for $1.00)
Mahi Mahi Citrus Tacos on Corn Tortillas




Mahi Mahi - Costco
Avocados (2 for $1.00)
Oranges (4 for $1.00)
Red Onion (2 for $1.00)
Fresh Cilantro (25 cents)




1.Using small sharp knife, cut peel and white pith from orange. Working over small bowl, cut between membranes to release segments.
2.Add avocado, onion, and lime juice to oranges in bowl; stir gently to blend. Season salsa to taste with salt.
3.Heat oil in heavy medium skillet over medium-high heat. Sprinkle fish with salt and pepper. Add fish to skillet and sauté until brown and cooked through, about 5 minutes per side.
4.Place 1 fillet on each corn tortilla. Spoon salsa atop fish and serve.

All-in-all, a delicious seasonal dinner! We then met up with a few friends for a church event. The event was complete with brownie sundaes and cream puffs ...did I mention I love (dessert) my church??!!?? ;-)
