Gluten free banana blueberry pancakes

Hi friends! It's been awhile!

Thought I'd pop in to share a delicious recipe i had for dinner last night. Yes, that's right, we had breakfast for dinner and it was additively perfect!

The best part?  You don't have to make breakfast the next morning with the leftovers. Any morning that starts with these babies is a beautiful one!

Here's the recipe, hope you enjoy!
Mix together
3 eggs
3/4c coconut milk
1tsp vanilla
2 ripe mashed bananas
2T coconut oil
1.5 C gluten free flour of your choice (I used oats, garbanzo flour, and soy flour for an added protein punch)
1tsp baking soda
1T lemon juice
Dash of cinnamon
Optional: add in organic frozen or fresh blueberries (I found they were too crumbly to flip so I ended up adding my blueberries as a topping instead)

Grease pan with extra virgin olive oil and pour batter into 3 inch rounds
Let cook 1-2 minutes then flip and cook 1-2 minutes more

Serve immediately with fresh blueberries, Greek yogurt, and organic maple syrup. Enjoy:)

Coconut Pineapple Chicken

MY RUN:

I decided to get in a few slow treadmill miles last night while dinner cooked in the oven.  I ended up running 4 miles in 32 minutes while watching an episode of "Friday Night Lights" on my Kindle Fire.  I made it to season 3 and love it so far!

It really is the perfect to show to watch during a run, it's 40 minute long. includes football inspiration talks, and high school romances, and it keeps me interested so I forget I am running...almost! ;-)

For dinner I decided to make up a recipe. I had two thawed, plump, organic grass-fed, hormone-free chicken breasts in my fridge and was in the mood for something sweet.

I ended making Pineapple Coconut Chicken served with Citrus Slaw and Quinoa. For Dessert I ended up making 4-Ingredient Protein Peanut Butter Balls modified from a few recipe ideas I saw on Pinterest.

It was so easy!!

Coconut Pineapple Chicken
Crushed Pineapple
Coconut Oil
Sweetened Coconut Flakes
Lime Slices for garnish

Preheat Oven to 350F
Rub Coconut oil on a 8x8 glass baking dish
Place 2 thawed Chicken Breasts in baking dish
Cover with a large can of crushed Pineapple
Top with a small handful of Sweetened Coconut Flakes
Bake for 50 minutes or until chicken is cooked all the way through.  May add hot sauce depending on you taste for a more Polynesian-flavored dish.

Citrus Slaw
Bag of sliced Coleslaw Cabbage
1TB Apple Cider Vinegar
1/2c Light Mayo with Olive Oil
1TB Sugar
2TB Sweet Pickle Juice

Mix the last four ingredients together in a small bowl
Pour over the shredded cabbage and mix
Refrigerate until ready to serve

Protein Peanut Butter Balls
1c oats
1c peanut butter
3/4c protein powder
3/4-1c honey or maple syrup

Mix all ingredients together and roll into small 1inch balls
Refrigerate until ready to serve

Overall, Bryan and my mother-in-law liked the meal! :-)

RUM Cake

I was in a dangerously adventurous, mood and decided to try something new.

I opened the freezer this am and saw a half a bottle of Captain Morgan Spiced Rum in there. Hmmmm, I thought- what could I do with this?!?!?!?!?

make RUM CAKE!!!!!!! of course!!!!!!!!

So I searched recipes online and decided to make up one of my own!

1 box Jiffy yellow cake
1 box vanilla pudding
2 eggs
1/4c oil
1/2c rum

bake in bundt pan at 325F for 30 min or so

saute 1/4c butter and 1/4c suger on stove and add 1/4c rum

pour over cake

It turned out delicious, even more so after left overnight. And a little rum is the perfect way to start the weekend ;) just kidding! but it was great!

Question to think about:
Whats a dessert recipe you love but hardly ever think about making?
I first had rum cake in the Caymon islands and have always loved it. I just never thought of making it myself. What a great idea!
