Gluten free banana blueberry pancakes

Hi friends! It's been awhile!

Thought I'd pop in to share a delicious recipe i had for dinner last night. Yes, that's right, we had breakfast for dinner and it was additively perfect!

The best part?  You don't have to make breakfast the next morning with the leftovers. Any morning that starts with these babies is a beautiful one!

Here's the recipe, hope you enjoy!
Mix together
3 eggs
3/4c coconut milk
1tsp vanilla
2 ripe mashed bananas
2T coconut oil
1.5 C gluten free flour of your choice (I used oats, garbanzo flour, and soy flour for an added protein punch)
1tsp baking soda
1T lemon juice
Dash of cinnamon
Optional: add in organic frozen or fresh blueberries (I found they were too crumbly to flip so I ended up adding my blueberries as a topping instead)

Grease pan with extra virgin olive oil and pour batter into 3 inch rounds
Let cook 1-2 minutes then flip and cook 1-2 minutes more

Serve immediately with fresh blueberries, Greek yogurt, and organic maple syrup. Enjoy:)

Today's Food So Far

Today had been one of the rainiest days ever. I heard that there was a severe tornado just west of me so it's a bit alarming driving around.

Waking up to the dark rainy world, I decided to take advantage of it and sleep a little longer this morning instead of going on my normal 40 min speed walk. It felt sooo good to sleep in! I do love my sleep;)

Breakfast was low key, which just seemed fitting for the type of morning it was.
I had Greek yogurt topped with strawberries, blueberries, flax seeds, and apricot slices and a banana on the side. Hit the spot!



Today work has me up in Fort Piece so I have limited lunch options. (can Fort Pierce please get a Starbucks!?!) I opted for McDonalds oatmeal. it was the perfect comfort meal for this blustery day.
Now off to my next stop and hopefully no tornadoes in sight!

Weekend of Breakfasts and...


Let me just put it out there, I LOVE breakfast food! If I could, I would eat breakfast for every mal all the time! From Blueberry waffles, french toast, muffins, yogurt, fruit, eggs, omlettes- breakfast food pretty much satisfies every sweet, salty, delicious craving. Luckily Bryan is the same way and we got our ultimate breakfast fix this weekend.

Watching The Tourist. I thought it was well done- nothing overly impressive, but it made me want to travel to Venice.

Getting a Massage!
I got a deep tissue massage after my 5 mile run on Saturday. It was definitely DEEP tissue, relaxing and slightly painful- but in a good way :)

Time: 41 minutes

Breakfast for dinner! Bryan and I went to two breakfast places over the weekend. The Boynton Diner on Saturday for dinner. I got a traditional egg, bagel, and fruit breakfast- yum!

Breakfast for lunch! We LOVE breakfast food so we decided to go to Makebs Bagels for lunch on Sunday after church. Makebs has over 110 bagel sandwich/omelet/salad platter options! Delicious!

Putt-putt golfing!
We met another couple for putt-putt and self-serve frozen yogurt Saturday night at this cute little place called "Puttin Around." in Delray Beach. It was so cute! Tons of tropical trees and plants and tiki torches- with food and wine service at every hole. What a great idea!

I like to balance it with time for me (going on a run), time with Bryan, and time with friends and time with God.
It was okay. Typical role for Angelina Jolie but surprisingly a lot less action than her other films.
