Go-to Meal

 
Today started right with a nice 40min run on the treadmill.  It was one of those runs that was about 80% mental.  I wanted to stop about three times, but kept going.  Afterwards, I rewarded myself with this delicious Blueberry Greek Yogurt Parfait.  (I also added some ground flax)
 
 
I was glad to do my workout in the morning- I felt like I had tons of energy all day as a result.  I also had a few sips of this:
 
 
This juice a great way to get in a few extra servings of veggies (especially when I don't have time to pack all the greens I would like to be eating throughout the day.  Its also great veggie alternative seeing that I ran out of organic spinach and am trying to wait til the weekend to go stock up again at Costco;-)  Can you believe that one bottle has over 24 carrots in it!?!
 
After a long day at work- getting in the door around 6:30pm, I was starved.  I opted for some chicken sautéed with green onion and fresh parsley, served with the last little bit of spinach I had in my fridge, goat cheese, blueberries, vinaigrette, and a corn tortilla.   
 
 
it made for a nice quick meal, considering Bryan was working late tonight so I didn't feel obligated to do anything fancy.

 
I am missing my little nephew like crazy this week!  After dinner I went through all my pictures from this past weekend and reminisced on how much fun it was!
 
  
He is growing up way too fast!

What is your go-to meal when you don't feel like cooking much?
Mine is usually a salad of some sort- I just open my fridge and throw a bunch of random things together.

Home-cooked meal + Workouts

Last night I made a delicious hearty meal for my family. I have been in Orlando the last few days, helping my mom recover from her surgery and have had a lot of time to practice my cooking skills :-)

I love being home! I love spending time with my family around the dinner table. Talking with my parents throughout the day, baking in the kitchen I grew up in! I love it!

Chicken and Dumplings
(adapted from the More with Less Cookbook)

3Steps:
Prepare the veggies
Prepare the chicken
Prepare the dough

Step 1: Chop up 2 cups potatoes into cubes, 1 onion, 1/2 cup fresh parsely, and 3 stalks celery


Add all veggies to 10-12 cups water with 10 chicken boulin cubes. Cook 10 minutes.


Step 2: Boil thawed chicken breasts for 30-40 minutes
Remove and cut into cubes
Add chicken to veggies

Step 3: Prepare the dough by combining 2 cups flour, 1/2tsp salt, 1TB butter, 4TB fresh parsley, 1/2 to 3/4c water


Roll the dough into a ball and cover for 15 minutes


Roll into 1.5inch squares and drop into soup mixture. Cover and let cook 10-15 minutes.

Enjoy!!!! Pair with fresh spinach salad (below) and whole grain bread and butter.

Spinach Plumb Salad

Spinach, plumbs, blueberries, and goat cheese. Drizzle with balsamic dressing.

And of course after a long day of waiting on my mom (I feel so bad for her- she is still in tons of pain)..... my sister and her bf went to the store to grab some freshly baked vanilla and chocolate cupcakes with cream cheese frosting. My mom deserved it! :-)

I Have the Best Boyfriend Ever!

It was one of those days. I was tired and hungry. I had worked hard all day in the blistering heat. I knew I wanted and needed to get in a long workout that night no matter what the cost.

Time 60min

Mileage 7.6mi


After a stop at the gym for a 60min run I drove over to Bryan's place to shower up and get ready for our biblestudy. I had exactly 20 min. to get ready and grab food while preping for tonight's discussion topics. Naturally, I had run extra long at the gym and didn't factor in enough time for dinner.


After a quick shower I was about to head out to my car to grab a cereal bar to hold me over til after study..... but my eyes lit up in surprise when I saw what awaited me in the dining room!





That would be:


Avocado, carrots, mixed greens, raisins, sea salted almonds, and black beans: aka the perfect salad!

It was the most delicious salad ever! Bryan is surprising me everyday and this was a a perfect treat! Its funny what things make me beam, but healthy food is definitely one of those things!

Best Salad Combo!

After working all weekend at a conference in Fort Lauderdale, I was so glad to have a lazy day today. After a leisurely morning at church, Bryan and I were craving healthy food so we went to Publix to see what we could find. We ended up getting a Kashi Roasted Vegetable pizza and adding pineapple and chicken at home before baking it. It was Delicious!

And then theres my favorite salad combo.


The best salad combo in the world:

Spinach
Chopped Fresh Peaches
Avocado slices
Sea Salted Almonds
Goat Cheese
Spritz of Lime

After a huge salad and our semi-homemade pizza we watched a bit of the Heat/Celtics game and fell asleep on the couch. I love lazy Sundays. We are going to squeeze in a quick gym session later tonight I hope.

Can't wait for Valentines Day tomorrow! No excuses, I am going for a run in the morning no doubt, gotta have room for all the chocolate ;-)

This year I think I am going to surprise Bryan at work with something- something chocolate dipped, involving balloons, and thoughtful, hope he likes it! :)
