The Cooper Restaurant and FroYo

Yesterday I woke up and got in a 3 mile run followed by 30 mins speed-walking. I totaled 5 miles which I feel pretty good about these days! (Still learning to take it easy for medical reasons)

Later, during my lunch break, Bryan and I met his boss for a celebration farewell lunch. Bryan recently accepted a position at a university and his boss wanted to congratulate him and send him off with positive regards. She is definitely someone whom he learned a lot from and we will miss seeing her. We are definitely excited for the future too!

We went to an amazing farm-to-table restaurant called The Cooper. It was phenomenal. I ordered the falafel kale tzatziki hummus wrap and a side salad and was not disappointed. Every bite was infused with flavor!


Bryan ordered the blackened mahi burger with a side of sweet potato fries and they definitely stole the show! 


They were perfectly sweet, salty, and slightly crisp- just the way I like them!

We will definitely be back to this place! 


The atmosphere was great- with huge open floor plan and mixed indoor/outdoor seating. 

It was so nice to sit down with Bryan's boss and so nice of her to treat us. I felt like a chapter of Bryan's life is coming to a close as he moves onto a new career path.  It was so neat to see how all the people he worked with really appreciate and respect him.  I am so excited for all the things God has in store for the next chapter! 

After lunch, I went back to finish out my day of work from home and before I knew it it was 7pm!  Bryan and I went to meet some good friends of ours at our favorite Froyo place in Palm Beach Gardens- Yogurtology. 


I had chocolate with oreos, s'more bites, chocolate covered waffle cones, chocolate chips, and frosted animal crackers. It was a perfect way to end the day.

Today's Food So Far

Today had been one of the rainiest days ever. I heard that there was a severe tornado just west of me so it's a bit alarming driving around.

Waking up to the dark rainy world, I decided to take advantage of it and sleep a little longer this morning instead of going on my normal 40 min speed walk. It felt sooo good to sleep in! I do love my sleep;)

Breakfast was low key, which just seemed fitting for the type of morning it was.
I had Greek yogurt topped with strawberries, blueberries, flax seeds, and apricot slices and a banana on the side. Hit the spot!



Today work has me up in Fort Piece so I have limited lunch options. (can Fort Pierce please get a Starbucks!?!) I opted for McDonalds oatmeal. it was the perfect comfort meal for this blustery day.
Now off to my next stop and hopefully no tornadoes in sight!

Lunch at "the tree"

If you went to PBAU, like I did, then you became very familiar with one of the most romantic, awesome hangout spots on Palm Beach Island- "the tree."  Just a bike ride away from campus, the tree was a perfect place to catch an afternoon nap, illegally carve yours and your boyfriend's initials in the branches (hint- I know who you are!!!), read a textbook, or have a picnic.

In fact many engaged couples go there for their engagement/ wedding photo shoots.

So, when Bryan and I started dating I introduced him to this glorious haven.  We grabbed lunch-to-go at Makeb's Bagel Shop, and parked on on of the shaded benches to munch on our everything bagel club sandwiches.  Two words describe it...."Ahhhhhh :)"  and "Yum."

Yes, forever I will love the tree and its magnificent branches.  Breath-taking.

Do you have a favorite park, trail that you find yourself going to often?
The tree is one of mine if I am craving quiet, secluded.  I also love to go walking downtown on Saturday mornings if I want to be around lots of people.
Do you make time to get outside each day?
I do.  I notice such a difference in my mood.  I am much happier with a little vitamin D.

Lunch at Paris

Back in college I rarely went out to eat.  I lived on meal plans and protein bars.  But there was one exception to that rule:  Paris Bakery and Cafe!  I discovered the quaint french family-owned cafe my second year in school and went at least once a week to get a taste of Paris. 

Located a few blocks from my university it was the perfect lunch spot to walk to with a friend. 

Serving sweet and savory crepes with bechmal sauce, enormous fresh and exquisite salads, homemade french bread, and their famous tarragon dressing, it easily became a favorite spot of mine. 

The other day I had a craving for the delicious healthy cuisine of Paris and called a friend for a quick lunch date. 
Having visited Paris a few years ago, it felt very similar.  Sidewalk tables, french accents, and amazing service.  And what made this date extra special???!!!??  A new guest joined us...


Sweet little William!  Born just a month ago.  He slept the whole time but he was precious!
